Lemon Tarragon Tuna Salad

Last week, the husband came home midday from a business trip so I whipped up this easy and delicious tuna salad for us to have for lunch. It’s not often that we get to have a quiet lunch at home together, so this was a nice treat!

The Lemon and Tarragon Vitality really brightened up the salad!

Lemon Tarragon Tuna Salad

1 can Tuna, drained
2-3 Tb. Mayonnaise, to taste
1/4 c. Celery Brunoise (that’s a tiny dice)
1/8 c. Onion Brunoise
1 drop Lemon Vitality
1 drop Tarragon Vitality
1 Tb. Chopped Fresh Parsley
Salt, to taste
Pepper, to taste
Dash Cayenne Pepper (optional)

Combine all ingredients in a mixing bowl, flaking the tuna, and adding mayonnaise to desired consistency.

Serve on your favorite toast with a slice of tomato and lettuce. Or serve over a bed of lettuce with diced tomatoes. Or, if you’re like me, just eat it straight out of the bowl with a spoon or your favorite dipper! Your salad, your rules! 🙂
